Vanilla Homemade Protein Bars

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup chopped almonds
  • 1 cup puffed brown rice cereal
  • 2 servings of CLEAN protein powder
  • 1 cup shredded coconut
  • ½ tsp ground cinnamon
  • 1 cup pitted dates
  • ¾ cup water
  • ¾ cup creamy almond butter
  • ½ cup dark chocolate, melted

Preparation

  1. In a large mixing bowl, combine rolled oats, chopped almonds, brown rice cereal, Vega One, coconut, cinnamon and salt.
  2. In a medium saucepan add the dates and water. Simmer over medium-low heat until the dates begin to break down, about 5-7 minutes.
  3. Stir in the almond butter until everything is combined and smooth.
  4. Remove from heat and pour over the dry ingredients.
  5. Stir to fully combine and then pour into the prepared pan that is sprayed with non-stick spray and lined with parchment.
  6. Press down the mixture evenly in the pan and drizzle the chocolate on top and crushed almonds.
  7. Sprinkle sea salt on top.
  8. Refrigerate for at least 60 minutes before cutting.
  9. Store in the freezer and take on-the-go!
